Welcome to Proof Kitchen & Lounge, your new first choice dining destination for every meal of the day. We are excited to introduce ourselves, and hope that you are excited too! Proof is located in Waterloo’s historic Barrelyard’s, and will provide a perfect backdrop for every occasion. We offer an upscale yet hip dining experience with a Chef-driven menu that boasts healthy, casual and creative food. Our meal selections are complemented by a unique selection of scotch, as well as expertly crafted cocktails, eight craft beers on tap, and a renowned wine list that includes 24 wines by the glass!
Proof will open later this summer with one simple goal: to make you happy. Our menu will be upscale, yet casual. It will feature many of your favourite meals but with a twist so that each dish we offer is unique from the rest. We combine locally grown food with globally recognized flavours, so that there is always a little something for everyone – yes, even the pickiest eater in the family!
At Proof, we offer what we like to call “Twenty-Mile burgers”. Rowe Farms supplies our meat, which is all naturally raised and grass fed within a twenty-mile radius of our restaurant. Our burgers include 6oz of ground chuck, clod and brisket served on a pretzel bun with bib lettuce, sliced tomato, red onion and Van Holten’s pickles. Our fries are thrice cooked white potatoes tossed with lemon thyme and Maldon salt.
Or if you feel like something a little lighter for your side, we offer “the Antioxidant” salad – which is comprised of kale & baby spinach, blueberries, spiced pecans, red onions, beets, pomegranate vinaigrette and roasted feta. Available with every burger!
Is your mouth watering yet? Because we’re just getting started: our Proof Signature burger includes mountain oak Gouda, hard cider and brown sugar bacon and truffle aioli. Bon appetite!
Our three-season patio seats one hundred people, and if you’d like a more personal setting for your party or business meeting, we offer not one but two private rooms to ensure that your time with us is as pleasurable and accommodating as possible.
